Why did you buy the Digi Smart Solutions program?

Bill & Tim’s Barbecue and Tap House is a restaurant located in downtown Eugene, Oregon which uses a Friedrich FMP400 commercial smoker to smoke proteins during the day and overnight. We have had 2 instances in the past 18 months where the smoker failed during the overnight unattended cook. The thermostat failed and the high temperature sensor shut the smoker down. We had to throw away $300+ worth of meat and, more painfully, did not have enough pork and brisket the next day for our customers. We also provide catering services to many weddings in the spring and summer. If this happened on a Friday night resulting in us not being able to deliver for a wedding it would have been a disaster. With Digi, if the temperature is too low or too high, key people receive text messages, emails, and phone calls, which allows them to go to the restaurant and deal with the smoker and meat. The meat would be put in our conventional ovens to finish cooking. The smoking part of the cook is finished in the first couple hours of the 12 hour cook, which starts at around 8:00 PM daily. The Digi Smart Solutions monitoring solution is set to trigger alarms between 10 PM and 7 AM if the temperature drops below 175oF or above 235oF. This solution allows us to set rules by day of the week and time of the day to send alarms to appropriate staff and thereby avoid alarm fatigue.

How has it helped you with compliance issues?

Compliance was not an issue.

What part of the program has been most valuable to you?

This cost effective solution avoids the costs associated with over/under cooked proteins in the event of a smoker failure, lost sales resulting from not having proteins the day following a failure, and the aforementioned risk of not being able to fulfill a contract for a major catering event.

How has Digi saved you time, money and improved product/patient safety?

We have yet to have a smoker failure. It provides us with peace of mind and a sense of insurance.
