Three C’s of HACCP Food Safety Standards Technology

The Internet of Things (IoT) is greatly benefiting the foodservice industry through smart wireless sensors and mobile technology. IoT technology is automating food temperature monitoring and tracking, collecting data, and creating reports through cloud-based system to more efficiently abide by Hazard Analysis Critical Control Point (HACCP) regulations, Food Safety Modernization Act (FSMA) compliance standards, and company guidelines. Commercial Kitchens, quick serve restaurants, and dining services can effectively and easily meet the requirements for HACCP plans, FSMA compliance standards, and company guidelines using these three C’s of IoT kitchen technology:
  • Consistency - Maintaining an effective HACCP management system depends largely on regularly scheduled verification activities such as temperature checks for prepared foods or daily cleaning duties. Scheduled tasks for predetermined periods of time are constantly monitoring and recorded to ensure all required tasks are being completed.
  • Compliance - HACCP logbooks and detailed temperature data reports should be collected via Bluetooth devices to provide real-time documentation that exceeds HACCP reporting compliance standards – all readily accessible and securely stored in a cloud platform.
  • Control - Automatically monitor Critical Control Points (CCP) and receive alerts to prevent or reduce food safety hazards, and even eliminate some of these risks altogether.

HACCP management systems are extremely helpful in keeping food fresh and safe for consumers but it requires top management, product teams, and workers to be thoroughly trained and consistent throughout developing, implementing, and maintaining a successful HACCP plan. Manually monitoring food temperature and tracking data in these fast paced working environments, with high turnover rates is a challenging task.
